Baigan (Brinjal/eggplant), the King of Vegetables. Baigan Bhartha is prepared by roasting eggplant on dying embers of charcoal fired clay oven, giving it a unique flavour, with pickling style spices that coax out the perfectly robust taste. This lovely dish has a subtle aroma and satisfying supper dish when served with Chapati (Wheat Indian Bread). Best when accompanied with onion wedges.
